Roasted Sweetpotato Ghosts - North Carolina Sweet Potatoes

Roasted Sweetpotato Ghosts

For 4 portions:

3 tbsp olive oil
½ tsp sea salt
3 sweetpotatoes

Directions

Note: you will need Halloween cutters for this recipe.

  1. Preheat oven to 180°C.
  2. Grease three large baking sheets with two tablespoons of olive oil.
  3. Peel and slice the sweetpotatoes lengthwise into 3mm slices and use your Halloween cutters to cut out the eyes and mouth for each slice.
  4. Place the slices onto the greased baking sheet in a single layer, rubbing them gently into the oil, then turn them over.
  5. Sprinkle lightly with sea salt and bake for 30 minutes, or until tender, and serve.
